Because you are comparing apples with pears.
anonym.to is only disguising from what webpage you connected to a site.
The FO approved linkprotectors are creating a different linkaddress to post.
Disguising what site you like to connect to.

I was in a bit of a hurry when I wrote my reply.
The last line should have been "They also disguise what site you like to connect to."
That may have made more sense to you.

Some samples to clearify what the difference is.

That's the link you present to the downloaders in your post.
It disguise both the final target, RS, and from where you connected, FO.
Eventually it will reveal the thrue RS link to the downloader but involves more work for linkdeleaters than a simple anonym.to link offers.
